5:30 Challenge / Shrimp Caesar Salad (w/photo)

Every once in a while it's good to mix up a classic to keep it fresh. When I saw the recipe for homemade Caesar dressing in today's Food Goddess column, I was eager to try it but wanted a meal rather than a side.I wasn't in the mood for the typical chicken Caesar, which seems to be on every menu these days, so I decided to add grilled shrimp instead. Adding shrimp to a salad is a great way to get healthy protein without breaking the bank, as you need fewer shrimp than when serving it as a stand-alone main course.

Try to find large enough shrimp that they can fit on the grill grate without falling through. If using smaller shrimp, skewer them to prevent loss.

If you don't feel like making the dressing from scratch, use your favorite bottled dressing.

Shrimp Caesar Salad

Serves: 4

1/2 cup homemade or prepared Caesar dressing

3/4-1 pound shrimp, peeled and deveined

1 (10-ounce) bag chopped hearts of Romaine or about 8 cups chopped Romaine

1/2 cup shaved Parmesan cheese

1/2 to 3/4 cup croutons

Preheat the grill. Remove 2 tablespoon of dressing and toss with shrimp. Set aside for 10 minutes, tossing after 5 minutes. Grill for 4 to 6 minutes, turning once. Set aside to cool briefly. In a serving bowl, combine Romaine and just enough remaining dressing to lightly coat. Top with cheese, shrimp and croutons.

Per serving: 346 calories (percent of calories from fat, 64), 25 grams protein, 6 grams carbohydrates, 1 gram fiber, 24 grams fat (5 grams saturated), 195 milligrams cholesterol, 555 milligrams sodium.
